Coconut Muffins


Are you looking for delicious breakfast ideas or a simple snack that is super quick & easy to make? Try these versatile gluten-free, grain-free, dairy-free, refined sugar-freevegan muffins in less than 20 minutes. These awesome treats are high in protein, healthy fats and fiber while being low in sugar.

Lately, I have been testing a lot of these muffins (although I am not complaining), thus far, my favorite has been, our local blueberry with organic lemon zest! The whole process takes only 20 minutes to make & can include almost any of your favorite ingredients! Oh,  and did we mention they pair beautifully with our local, organic teas?! Let’s have some fun & create your very own unique muffins!









Blueberry & Lemon Muffins


Add local blueberries & organic lemon zest!


Blueberry & Almond Muffins


Add local blueberries, organic cinnamon, organic chia seeds, local maple syrup & organic unbleached almond slivers!


Dry Ingredients
     In a bowl combine
1/3 cup raw unbleached organic coconut flour
1 tsp aluminum-free baking powder
1 tsp sea salt
1/2 cup unsulfured unsweetened coconut

Wet Ingredients
     Mix in another bowl
3 organic bananas / 3 free range eggs (room temperature)
1 TSP vanilla
1 TBSP honey/maple syrup (optional)
2 TBSP unsweetened coconut milk
3 TBSP organic coconut oil (melted)



Strawberry & Ginger Muffins


Add local strawberries, organic ginger, organic chia seeds, carob powder (or nibs) & unbleached organic almonds!

       Preheat the oven to 400*. In two bowls combine the wet & dry ingredients separately, making sure they are well mixed! Blend the two bowls together until smooth. If at first your final mixture seems to be too wet, this is normal! Coconut flour will absorb the excess! Once smooth, add your favorite ingredients such as blueberries, cinnamon, lemon, chia seeds, strawberries, coconut flakes, raspberries, nuts & seeds (the options are endless) & lightly mix. Grease a muffin tin with some coconut oil, then spoon in mixture filling the tin 3/4 of the way! Bake for 15 minutes (depending on how hot your oven is), the sides will brown beautifully! Enjoy these treats with your favorite tea or latte!!
